Description:
In a tiny, closet-sized location just across the street from the Mount Baker Theater, Pasquale and Louisa Salvati work. They have worked in this space six days a week, every week since they arrived in Bellingham from Genoa, Italy in February 2005. They do their work cheerfully and diligently and, more importantly for the rest of the population of Bellingham, they do their work well.

The Salvatis own and operate Torre Café -- an espresso bar and lunch spot that steals a bigger piece of both my heart and stomach every time I visit. When I recommend the place to people -- as I often do -- my only dilemma is what to praise first. Just thinking through this quandary makes my mouth water and my stomach growl, so I’ll start with what I’m guessing they sell a lot of: espresso. Some years ago I lost my taste for espresso, and coffee in general (long story -- worked for a coffee chain which will here remain nameless, drank too much of it, yadda yadda yadda, switched to tea.) Until one day I happened to taste an Americano at Torre Café. What a revelation - Pasquale Salvati’s Americanos are rich, creamy, smooth and never bitter. Since it’s the only espresso around that’s ever made me want to jump back on the caffeine bullet train, I’m going to go ahead and make this statement for the record: Torre Café serves the best espresso in town.

An espresso is best had after a good lunch, and a good lunch is definitely to be had at Torre Café. It’s served plainly, but don’t let the lack of decoration fool you. Louisa Salvati does not need to prettify her plates to convince you that her food is good. All you need to do is take a bite, and you’ll see for yourself. If you order a meatball panini, you’ll taste home-made veal meatballs and roasted red bell peppers in a savory marinara sauce. If you order the lasagne, you’ll start with a salad of very fresh mixed greens with a vinaigrette dressing, and end with a diligent scraping of your plate. My favorite soup is whatever they’re serving today, and I’ve always been happy with whatever sandwich I’ve ordered. I have stopped trying to guess what the Salvatis’ secret is -- though I have asked Louisa if she’s ever considered giving cooking lessons -- but I remain convinced that Bellingham is very lucky to have them here.
